MAVRO

17 October 2016 – Philippine “adobo” was given a French twist by Hawaii’s top gourmet chef and expert culinarian, Mr. George “Mavro”   Mavrothalassitis at “Chef Mavro”, Honolulu’s fine dining, top-rated restaurant and holder of the prestigious James Beard award, considered the “Oscars” of the culinary world.  George Mavro, is a founding member of Hawaii Regional Cuisine and was recognized by Wine Spectator as one of the eleven most important French chefs in America.

Philippine Consul General to Honolulu Gina Jamoralin, accompanied by Ms. Cecilia Villafuerte, Filipino community leader and entrepreneur and Mr. Ron Nagasawa, senior vice president publisher of Midweek, a weekly Hawaii newspaper, visited Chef Mavro and were treated to  a delicious  four-course “Haute Filipino” menu of  lechon, sinigang, and  adobo capped with halo-halo  featured in Chef Mavro’s menu on October 12. Each dish was paired with a different kind of wine carefully selected to further enrich gustatory experience.

Consul General Jamoralin thanked Mr. Mavro Thalassitis, the owner of Chef Mavro for lending his culinary mastery on Filipino classics by combining   French style and Filipino tastes. Mrs. Mavro Thalassitis, the owner’s wife also warmly greeted the Filipino guests.    Chef Mavro’s Filipino assistant chef, Mr. Jose Calpito, helped put together the Philippine menu and explained each dish. “Haute Filipino” has been in Chef Mavro’s October menu offering as a salute to the large Filipino community in Hawaii and in celebration of the Filipino-American Historical Month.

 

Chef Mavro is rated as “Top 40 Restaurants in the U.S.” and “Top 10 Restaurants in the World” based on a vote of the editors of Fodor’s guidebooks, and “Top 10 Seafood Restaurants in the U.S.” by Gayot Chef Mavro was born on the port in Marseilles, the capital of Provence, France. He trained under masters of contemporary French cuisine and experienced as owner of gourmet restaurant in Marseilles and Restaurant La Presqu’ile in Cassis, France. END
