Filipino Cuisine Introduced to Culinary Students in Portugal

LISBON 11 July 2018 – As part of the Philippine Embassy’s economic and cultural diplomacy initiatives to promote Filipino food and food products in the Portuguese market, a cooking demonstration was conducted for students at Escola de Hotelaria e Turismo, a school specializing in the tourism and culinary trainings in Lisbon, on 27 June 2018.

The cooking demonstration was conducted by Filipino chef Myrna Segismundo, who was in Lisbon for the Sabores das Filipinas food festival that ran at the Altis Avenida Hotel in Lisbon from 23 to 28 June 2018.

The objective of the cooking demonstration was to teach Filipino cooking techniques, giving up-and-coming chefs a taste of the country’s flavors.

Segismundo started her cooking demonstration by explaining that the presentation of Filipino cuisine would be best appreciated through explaining its ingredients and experiencing flavors.

Segismundo showed the culinary students ingredients indigenous to the Philippines, including calamnsi (lime), patis (fish sauce), bagoong (shrimp paste), and cane vinegar. This was followed by a demonstration on how to prepare popular Filipino dishes such as kinilaw, adobo, and turon.

During the cooking demonstration, the audience’s curiosity on Filipino cuisine was evident when they asked questions not only on food innovation but also on food entrepreneurship.

After the demonstration, they were given gift bags containing Philippine ingredients, courtesy of the Department of Trade and Industry. END
