MELBOURNE 06 March 2025 – The Philippine Consulate General in Melbourne highlighted the collaboration between Dröm Bakery and Dirty Ice Cream, two Melbourne-based brands committed to introducing Filipino signature flavors such as ube, keso, and avocado to the Australian market. The partnership is a direct outcome of the FilOz Flavours industry event held on 03 February 2025 by RW Marketing and Masterplan Global, in collaboration with the Consulate General, which aims to bring Filipino flavors and ingredients to Melbourne.
The collaboration was formalized at the Consulate General on 28 February 2025 between Chef Ricci Carmona, proprietor of Dirty Ice Cream (awarded Best Dessert at the Australian Culinary Federation 2024), and Ms. Con Buada, co-owner and Creative Director of Dröm Bakery. Their agreement entails a month-long showcase in May 2025, during which Filipino flavors will take center stage in a special line of desserts. Dröm Bakery and its sister café, Hatter & the Hare, will also be integrating Filipino products into their menus and retail offerings.
The Dröm Bakery x Dirty Ice Cream Collaboration Launch Event was held on 03 March 2025 in Dröm Bakery at 1/19 Scoresby Rd, Bayswater, Victoria, and was attended by Consul Jan Sherwin P. Wenceslao, together with industry pastry chefs, food influencers, and members of the Filipino and Australian community. The event underscored the growing appreciation for Filipino flavors in Australia and marked another milestone in mainstreaming Filipino cuisine in Melbourne’s dynamic food scene.
The Consulate remains committed to supporting Filipino entrepreneurs and businesses in Australia and looks forward to further collaborations that promote Filipino culinary excellence. END
