29 September 2014 - A Filipina chef together with seven other aspiring chefs from Hong Kong, Macau, Singapore, China, South Korea, Vietnam and Thailand participated in the Asia-final of the 7th Disciples Escoffier Asia Young Talent Trophy (DEYTT), the recognized leading competition for young Asian chefs.

The competition was organized by Diversified Communications Hong Kong during the Restaurant & Bar 2014 Show at Disciples Escoffier Theatre, Hall 5FG of the Hong Kong Convention & Exhibition Centre from Septmeber 02 to 04.  

The Philippine Consulate General attended the opening ceremony of the competition and was represented by Vice Consuls Charles Andrei P. Macaspac and Fatima A. Guzman.  Vice Consul Macaspac gave an inspirational message to all participants, especially to the Philippine representative, Ms. Marie-Rhae H. Salazar.

Disciples Escoffier is a French association of top chefs dedicated to bequeathing their respective gastronomic legacies to the next generation. DEYTT offers the opportunity for young chefs to pursue their dreams. Its winners will find numerous opportunities opening up to develop distinguished careers. DEYTT is open to anyone under the age of 25, with a maximum of 5 years of kitchen experience.

The competition was filled with three-day culinary challenges where the contestants were tasked with handling Escoffier’s own recipes and serving their dishes to the competition’s judges and renowned chefs. They were required to prepare a themed dish with the ingredient “Egg”: Oefs Pochés Masséna-Massena Poached Eggs using Egg, Tomato and Jerusalem Artichokes in Round 1; a dish with “Duck Breast”: Braisé Magre de Canard a l’Orange (braised duck breasts with orange) together  with Salade de Pommes de Terre a la Parisienne (Parisienne Potato Salad) in Round 2; the final challenge had the theme of “Pork and Apple Tart”: Cotes de Porc a la Flamande (Pork Chops a la Flamande) together with Pommes de Terre (Mirette and Mirette Potatoes), as well as a dessert using apples served with a cold dessert sauce.

Mr. Lee Won Yong from South Korea won the competition having demonstrated exemplary culinary skills throughout the three-day contest.  Mr. Yong will represent Asia at the global final round in France. END
